INGREDIENTS

Cake:

  • 2 bags HighKey Blueberry Muffin Mix
  • 8 large eggs
  • ½ cup unsweetened almond milk
  • ½ cup melted coconut oil

 

 

Frosting:

  • 8 ounces cream cheese
  • ½ cup unsalted butter
  • 1 cup powdered erythritol
  • 3-4 tablespoons heavy cream, for thinning
  • ½ teaspoon almond extract

 

Topping:

  • 8 large strawberries, thinly sliced
  • 50 blueberries

DIRECTIONS

 

  1. Preheat the oven to 350° F. Grease a 9x13 baking dish
  2. In a large bowl, combine the cake ingredients and mix until smooth. Transfer to the prepared pan and transfer to the oven. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let cool completely before icing the cake.
  3. To make the frosting, beat the cream cheese and butter together until fluffy and smooth. Add in the powdered erythritol and almond extract. Mix well then thin out to your desired consistency with the heavy cream.
  4. Ice the cooled cake with the frosting then arrange the blueberries and strawberries on top to resemble the pattern of a flag or whatever pattern you desire. Store refrigerated for up to 5 days.
